Rooty Hills's Newest destination pub: The Woodstock is Open

The Woodstock (formerly Carousel Inn), one of western Sydney’s most recognisable pubs will officially re-open this Friday 26 September at 3pm following a multi-million dollar transformation. With a brand-new look, new outdoor spaces, a family friendly bistro and an events centre, The Woodstock will be the new community heartbeat of Rooty Hill and Sydney’s northwest corridor.
Designed as a one-stop destination for locals, The Woodstock will bring together everything from family dinners and weekend drinks to milestone celebrations and game-day traditions. A place for all occasions for its local community.
At its heart is a buzzy, family-friendly bistro built around generosity, flavour and great value. Mediterranean-inspired pub classics headline the menu, from woodfired pizzas and chargrilled meats to large-format sharing dishes. Menu highlights include Woodfired pizzas (from $22), the west’s best chicken parmie with chips and salad ($29), a delicious Woodstock classic smash burger ($23) and one of many hero desserts such as a chocolate and cherry bomb for two.
For the little ones, there’s a dedicated menu featuring favourites like pastas, cheeseburgers and grilled chicken with veggies, making it a welcoming spot for the whole family. All kids dishes are $12 and all come with a free soft drink or juice. It’s all about generous portions, fresh flavours and making sure no one leaves hungry.
Executive Chef, Steve Koenig said “We’ve built a menu that’s generous, hearty and approachable and one that is designed to serve our community well. Think woodfired pizzas coming straight out of the oven, big chargrilled steaks, Mediterranean flavours that are fresh and punchy, and plenty of kids’ favourites so no one misses out.”
“We want this place buzzing,” said General Manager of the Woodstock, Rhyan O’Halloran, “The bistro will be full of families on a weeknight, the beer garden packed on a sunny afternoon with groups, the Sports Bar heaving when there’s a big game on. We’ve got the event space ready to go for sport lunches, weddings, birthdays - you name it.”

The Woodstock has been designed by KP Architects in collaboration with Solotel’s in-house design team, with lime-washed finishes, earthy terracotta tones and warm timbers. It feels like a beautiful and welcoming local home. The sprawling kids playground will rival others in the west, with climbing walls, a games corner, talking tubes and slides.
Outdoor spaces wrap around the pub and will be a go-to space for groups looking to soak up the weekend. The outdoor Garden Bar provides a bright outdoor oasis, perfect for after-work drinks and weekend catch-ups, while the Sports Bar delivers big screen action with high-top seating and a dedicated lounge. Rounding out the mix is a new purpose-built events space catering for up to 250 people — flexible enough
to host everything from weddings and engagements to community lunches and corporate functions.
To mark the opening of The Woodstock, we’re bringing the community together for a jam-packed weekend of fun - with Messy Makers kids’ workshops, a headline reptile show, giant jumping castle, a brand-new outdoor playground, and a special meet & greet with Bluey and Winton. For the adults, there will be live music everyday, Footy Finals live and loud, as well as beautiful spaces for dining and drinks the whole crew will love.
